Miranda Kerr’s Apple and Banana Oat Muffins

Just made these for a little morning breakfast treat. They were DELICIOUS, and hubby approved as well.  I think they are just perfect option for breakfast or snack.  But!!!! They looked nothing like the original picture – they were more lumpy, and they crumbled as I ate. The ingredients resembled more of a healthy breakfast than the makings of a muffin. In fact they’re the perfect recipe for pregnant women. The use of ground oats instead of flour makes them low in carbs, which is key to staying light and healthy whilst carrying. So here you have it, the quintessential solution to a muffin craving XXX INGREDIENTS 2 cups oatmeal 2 teaspoons baking powder 1/4 teaspoon baking soda 1 1/2 teaspoons ground cinnamon 1/4 cup honey 2 tablespoons chia seeds 1/4 cup goats milk yogurt 1/2 cup apple juice 2 eggs, lightly beaten 1 egg white 4 tablespoons coconut oil 1/2 teaspoon vanilla bean powder 2 large green organic apples 2 ripe bananas ( I hate bananas in muffins, so I didn’t use them )  1/2 cup chopped walnuts PREPARATION In a food processor, grind the oats into a flour-like consistency.
